Texas Tortilla Soup Recipe


Texas tortilla soup
From the kitchen of Callie Davis


Ingredients:

2 gloves of garlic
2 T butter
2 t ground cumin
¼ C onion
2 (14 oz.) cans of stewed, diced tomatoes
1 can corn
½ C salsa
1 ½ C water
2 C shredded chicken (canned or leftover)
Cilantro (save some for topping)
Seasonal and/or salt and pepper to taste

Instructions:

Saute onion and garlic in 2 T. of butter in a cooking pot on the stove.
Add cumin, broth, tomatoes, corn, salsa, and water, and bring to a boil.
Add shredded chicken, then add cilantro (to taste), and simmer for 5 minutes.
Serve with these optional toppings:  shredded cheese, tortilla chips, and sour cream. Garnish with cilantro.

Gift box idea for daughters--of mothers

                                This is a box I'd painted years ago
for my oldest daughter, a beautiful mother herself. In fact, I painted boxes for all five of my lovely daughters who are all lovely mothers now, and the pride and joy of my life. In the letter below the first picture, she explains what she has done with that box.




Hello-Best Mom Ever!

I thought for 2 weeks about what I could buy you and send.  Why does everything you can purchase seem so underwhelming when trying to show your love and appreciation to the person who sacrificed everything to give you your life and love of the gospel?

I decided to share a little moment our family had together about 2 1/2 weeks ago.  Andrew is always into everything and he found my "treasure box."   He brought it to me and asked what was inside.  The entire family was hanging out on our bed and wanted to hear my response.  I keep my box inside my big dresser as there are still too many sticky fingers into things around here.  I told him, "that is my treasure box where I keep my precious treasures."  His eyes grew big and then everyone wanted to see it and look inside.  I explained that my mother made it for me and then opened it to show them the pictures you glued inside.  Then I started pulling out drawings and notes the kids had made me over the years, their handprints and special things like that.  I have letters you and Dad and Nick wrote me in there and my patriarchal blessing.

Everyone had such a great time looking through it and they all felt really special that THEY are my most valuable treasures.

Thank you for making that beautiful box for me.  Every time it look at it I am reminded that I have a mother who really loves me.  I am only beginning to understand the sacrifices you made to raise 6 children and help form us into good people who love The Lord.

I love you so much!!!  Thank you for loving me!!!!

Even if you don't hand-paint a box, you could modge-podge pictures on the outside, and do the same on the inside with pictures of your child.  Just an idea . . .
